Having seen a number of Inventory systems I was happy with the level of depth that the Odoo system offers for its product database. If you want it just simple, you can add in your products to the system and leave the defaults for the additional elements. But it does offer the option to control the General ledger accounts by items, as well as Batch or Serial number tracking and variations on a base product.
Variations is a great option. Say you have a product that is essentially the same as another, people might want to see how much Cat-6 data cable they have in stock as a total product, but also wish to colour code on a site the cables to different job sections or usages. You can quickly see the overview of how much of the product that you have available to sell and then pull up the break down by colour of the product before you commit to the order.
Inventory Management ease is important when setting up a system, you want it simple for sales staff to understand what you have available, to have the options that they are going to use in a sale and nothing more.
